French Bread

How to Cook FRENCH BREAD

INGREDIENTS
  • ½ cup evaporated milk
  • 1 cup water
  • 2 tbsp sugar
  • 1 tbsp butter
  • 1 tbsp compressed yeast
  • 4 cups all purpose flour
  • 2 tsp salt
  • 1 egg white (for egg wash)
  • 1 tsp water (extra)
  • Sesame seeds
  • 2 tsp oil
  • Ice
  • 2 tsp dough improver

UTENSILS NEEDED
  • Measuring cups
  • Measuring spoons
  • Measuring glass
  • 2 mixing bowl
  • Rolling pin
  • Can opener
  • 2 baking sheets
  • Dough cutter
  • Pastry brush
  • Spatula
  • Wooden Ladle
  • Sifter

PROCEDURE

1. Place milk, water, sugar, and butter in pan. Stand over low heat until butter is melted. Allow to become lukewarm, add yeast stir until yeast is dissolve.
2. Soft flour and salt into large bowl
3. Make a well in center of dry ingredients. Add milk mixture. Sprinkle over a little flour from sides of bowl. Stand bowl in warm place until milk mixture is frothy.
4. Mix in flour, turn out into floured surface. Knead well. Place dough in lightly oiled bowl. Approximately 20 minutes.
5. Punch down and knead on floured surface for 3 minutes. Return to bowl, place in a warm place until doubled in bulk. Approximately 20 minutes. Turn out into floured surface. Knead well. 
6. Divide mixture into 6 equal portions. Roll each portion into 40 cm (116 in. long) Take 2 roll and form into plate securing each end. Brush plate with combined egg yolk and extra water then sprinkle over with sesame seeds.
7. Bake in hot over for 10 minutes. Then remove from oven and pour the bread with cold water. Remove the excess water from the baking sheet and return the baked bread to the oven. Repeat until bread sounds hollow when tapped on base.
